Bioprotection During Pre-Fermentation with EnartisFerm Q MCK
EnartisFerm Q MCK is a non-saccharomyces yeast (Metschnikowia pulcherrima) that was specially selected by the Centre of Excellence for Research in Microbiology (CERM) for its strong antimicrobial properties. CERM, established in 2024, specializes in research and development in the field of enological biotechnology. Its mission is to provide winemakers with reliable tools to improve their production processes through a tailored, scientific approach. EnartisFerm Q MCK is a natural alternative to SO2, and helps prevent quality loss caused by contaminating microbes and preserves aromatics. A non-fermentative yeast, its ability to quickly proliferate in juice and must even at cold temperatures makes it the ideal strain for bioprotection during pre-fermentation processing. The study revealed that fermentation temperature significantly influenced phenolic extraction, with higher temperatures resulting in increased extraction of phenolic compounds. EnartisFerm D20 successfully completed alcoholic fermentation across all temperature regimes. Additionally, variations in phenolic content and color characteristics were observed among the Pinot Noir clones, with Clone 777 displaying the highest phenolic content. EnartisFerm Q4: Yeast Strain for Grassy Thiolic Wines
EnartisFerm Q4 is a strain of Saccharomyces cerevisiae that has the unusual characteristic of being homozygous for the complete version of the IRC7 gene, a gene that encodes the synthesis of particular ß-lyases, active in hydrolyzing cysteine conjugates of 4MMP. This attribute gives yeast the ability to reveal green aromas associated with these specific thiols such as boxwood, tomato leaf and Scotch broom. Among varietal thiols, 4MMP is certainly the one whose content in grapes is conditioned by the climatic and growing conditions of the vineyard. Where these conditions have grapes with a good 4MMP content, the use of EnartisFerm Q4 produces wines characterized by a pronounced grassy aroma, much sought after by Sauvignon blanc admirers. *Odor Activity Value (OAV) represents a compound's contribution to the aroma of a given food.
