Enhance Varietal Aroma, Flavor, Mouthfeel, & Color with BioSelect Enzymes
Enological enzymes have proven their value in wineries around the world to produce wine with enhanced varietal aroma, flavor, mouthfeel, and color. Selective release of these flavor, color, and aromatic compounds from the epidermic and hypodermic cell layers of the grape skin serves to increase varietal intensity without introducing undesirable components. The right blend of enzymes can be used to enhance and support the winemaking process to achieve desired and reliable results. MACERATION & EXTRACTION   BioSelect ®  Noir           • Increase color extraction and improve color stability in premium red wines        • Release anthocyanins, tannins, and polysaccharides early in maceration “We did notice an increase in color. Stability of the color is done really well considering that’s kind of a fight here in Texas since we are dealing with higher pH wines. We’ve noticed even with those higher pHs, the color stability

2024 Women’s International Wine & Spirits Competition Names Carol Shelton Wines’ 2022 Coquille Rouge Best of the Best Wine; Von Payne Infused Bourbon Takes Top Spirits
JUNE 28, 2024 – Winners have been announced in the 17th annual Women’s International Wine & Spirits Competition (IWWSC). The competition, which took place June 10-12 in Santa Rosa, Calif., was founded on the premise that the majority of wine purchased for home consumption is bought by women. The IWWSC judging panels consist entirely of professional women in the wine and spirits industries — winemakers, distillers, marketers, buyers, sommeliers, educators and journalists.  “As always, the International Women’s Wine & Spirits Competition shined a spotlight on hundreds of deserving wines,” says Debra Del Fiorentino, owner of Wine Competitions Management & Production, which organizes and presents IWWSC. “And even though entry is open to all winemakers regardless of gender, I found it gratifying that six of this year’s sweepstakes wines were created by women. And our overall wine winner also was named Best Woman Winemaker

Tips from WGits: Get Set Up for Less Interruptions
With both QB Desktop and QB Online there are a few automated things that can negatively impact your workflow. We’re going to go over key settings to adjust for QB Desktop which will result in fewer pop-ups and fewer interruptions. Spell Check: In practice, it’s nice to have, however, QuickBooks doesn’t recognize words like Gewurztraminer or Ehrenfelser, so spell check often just becomes an annoyance with many wine industry words. To turn it off, go to the Main Menu > Edit > Preferences > Spelling > My Preferences > uncheck the “always check spelling” checkbox. Reminders: Some reminders are unnecessary and can interrupt third-party integrations like Bill.com or WGits. To turn off some reminders, go to Edit > Preferences > Reminders > and then go through and switch off whichever ones you can. Usually, you can turn off most or all of these.  Memorized Transactions: You may need memorized transactions to help you

SPARKLING WINE TAKES TOP HONORS FOR FIRST TIME EVER April 12, 2021 (Santa Rosa, Calif.) — Winners have been determined in the 2021 Press Democrat North Coast Wine Challenge (NCWC), and for the first time in the event’s nine-year history, a sparkling wine has bested the competition. Sonoma-Cutrer's 2014 Grand Cuvée was chosen by judges as the Best of the Best. This regional competition rates wines exclusively produced and bottled in Northern California's premier winegrowing region. Eligible wines must be made from fruit sourced in the North Coast AVAs of Lake, Mendocino, Napa, Sonoma, Marin and parts of Solano counties. This includes any bottled wine labeled with these AVAs as their main source of grapes and whose winery is in California. This year’s NCWC had the highest ever number of entries (nearly 1,200) from a record number of individual wineries (221), indicating both the prestige of the competition and the hunger for the r

SafÅ’noâ„¢ GV S107
Ideally adapted to premium whites.         Premium elegant whites   SafÅ’noâ„¢ GV S107 is recommended for winemakers seeking for enhancing roundness and aromatic complexity to their whites, especially for elegant cultivars without major aroma precursors like Chardonnay.  Thanks to its analytic and aromatic cleanness, it is perfectly suitable for high alcohol and high pH full bodied whites issued from ripe fruits, fermented in barrels and/or aged on lees and undergoing malolactic fermentation. Its sweet and long lasting finish will provide a real advantage for short ageing premium whites. Fresh fruit and floral whites   On fermentation side, SafÅ’noâ„¢ GV S107 is characterized by its promotion of floral and fruity higher alcohols and esters (rather than isoamyl acetate). On variety side, it helps releasing floral and citrusy aromas (terpens and C13-Norisoprenoids) from grapes. Thus, SafÅ’noâ„¢ GV S107 gently promotes aromatic varieties such as Viognier, Chenin Blanc, Rieslin
