Sparkling wine is one of the most expressive and technically demanding wine styles. Its character begins with the grape variety, the vineyard, and the production method, but the final sensory signature depends heavily on yeast. Yeast acts as the invisible winemaker, shaping aroma, flavor, texture, and bubble structure throughout both primary and secondary fermentations. Different strains of Saccharomyces cerevisiae behave very differently under the challenging conditions of sparkling wine production. Low pH, increasing alcohol, and high pressure create an environment where only the right strains thrive. Equally important, each strain varies in its ability to create and release the flavor compounds that drive complexity and define style. When secondary fermentation takes place in the bottle and is followed by proper riddling, the yeast has an even greater influence on the final profile. To help winemakers better understand the impact of yeast selection, ATPGroup conducted a focused tria

As a winery owner, you know that the pre-harvest season is one of the busiest and most critical times of the year. Preparing your vineyard and production facilities for the intense surge in activity is essential — not only to ensure a smooth harvest but also to protect your operations from potential environmental and regulatory challenges. One often overlooked yet vital aspect of pre-harvest preparation is wastewater treatment system maintenance and bioaugmentation. Proper attention to these areas can save you significant headaches, reduce costs, and ensure compliance with evolving environmental standards. Why Pre-Harvest Maintenance Matters for Winery Wastewater Systems During harvest, wineries generate a substantial increase in wastewater volume and organic load. This wastewater comes from equipment cleaning, barrel washing, floor cleaning, and other processes. The fog along the California coast is alive — it flows from the Pacific Ocean up through passes in the protective coastal ranges and into the valleys like a tide. It rises into the hills and breathes before slowly receding to the valley floors and retreating through the mountains, across the sands and into the ocean waters. Toward the north, these fogs nurture the redwoods, and all along the coast, they provide relief from hot daytime temperatures for many wine country vineyards. The Niner Estate vineyards are near Paso Robles, about 20 miles from the Pacific Ocean. They are protected from the cold maritime winds by the Santa Lucia mountain range that parallels the coastline. One of the valleys the fog creeps through is the nearby Templeton Gap. For over a decade, Niner Wine Estates’ winemaker Patrick Muran has been crafting the Fog Catcher Bordeaux blend that he says is “named after the cool banks of fog we often see drifting over our vineyards on early mornings in
