30 Sec. Grape SampleSeptember 13, 2024
The 9 Things You Should Know About Your GrapesAs harvest is starting to ramp up across California many winemakers are missing out on some important information about their grapes. myEnologist is here to solve that problem, offering a full panel on juice samples at a price anyone can afford. Our juice panel measures Brix, TA, Tartaric Acid, Malic Acid, pH, Glucose/Fructose, Ammonia, Alpha Amino Nitrogen and Potassium all for one low price. Prices range from $10 - $20 per sample for our subscription services and $40/sample for occasional clients.
Why do you need to know all 9 things to make great wine? Everyone already measures 3 of these 9 parameters (Brix, TA and pH) to judge maturity before picking. The ammonia and alpha amino nitrogen are commonly used to determine the amount of nutrient addition that is necessary for a healthy fermentation to avoid stuck or stinky fermentations. Knowing the tartaric and malic acid concentrations gives you a good picture of what is making up most of the total acidity of the wine and how a malolactic fermentation might affect that balance. And potassium concentrations could help indicate whether your juice is buffered (and therefore more difficult to change the pH when acidifying.) Knowing all of these parameters is quite useful when making important winemaking decisions such as when to pick, calculating additions rates and achieving stylistic goals.
Free courier service is available for subscription clients or samples can be dropped off at our office located at 1866 El Centro Avenue in Napa. And while you're here you can stock up on everything you need for the lab or cellar! We offer yeast, nutrients, chemicals, Remco products, safety gear, stainless fittings and so much more. Check out our harvest offerings at our website or by downloading our harvest brochure located on the Producst/Services tab.
If we can help you with either lab analysis or harvest supplies please email us at info@myenologist.com or call 707-812-1242.
