Wine Closure Innovation Provides New Oenological Tools for Winemakers

Diam Bouchage, the leading manufacturer of technical cork closures for still wines, sparkling wines, and spirits, introduced new permeability options for their popular Diam 10 and Diam 30 corks at the Unified Wine & Grape Symposium.

“Our closure solution is a winemaking solution,” said Dominique Tourneix, CEO Diam Bouchage, speaking at the Symposium. These new cork options allow winemakers to bottle the same wines, on the same day, with different DIAM corks depending on the objectives of aging and maturity characteristics of the wine.

“Diam is a recipe with different ingredients,” explains Tourneix. “By playing with the recipe, and the proportion of the different ingredients, we can adjust the oxygen transfer through the cork structure. Sometimes you may wish to have a quicker wine evolution, and other times you may want to keep it for 30 years. Until recently, the Diam 10 and 30 range had a very tight closure, but we have developed a new recipe with a much more open permeability level."

Diam already offers multiple oxygen ingress rates (OIR) and oxygen transfer rates (OTR) in their Diam 2, 3, and 5 cork ranges. The new permeability options give winemakers the flexibility to use a cork that guarantees a long lifespan while also aging faster for earlier consumption.

MODESTO, Calif.  (January 19, 2023) – Diam Bouchage, the leading manufacturer of technical cork closures for still wines, sparkling wines and spirits, has introduced new permeability options for its popular DIAM 10 and DIAM 30 corks designed to provide winemakers with more choices for their wine programs.   The new closures can be viewed at the Unified Wine & Grape Symposium in Sacramento, January 25-26, at the Diam booth, #538. 

“Oxygen management is critical for winemaking, so Diam offers a wide range of products with different oxygen ingress rates (OIR) and oxygen transfer rates (OTR) for our Diam 2, 3, 5 and Origine by Diam corks.  However, winemakers have been asking for a cork option with higher OTRs and this solution will provide them with a brand-new tool to consistently age wines after bottling,” said Dimitri Tixador, director of permeability at the Diam Bouchage’s R&D division.  He added, “The new closures will also promote faster aromatic development of the wine during the initial years of aging, making it suitable for use on a range of different wines.”

With these new corks, winemakers will now be able to bottle the same wines, on the same day, with different DIAM corks depending on the objectives of aging and maturity characteristics of the wine.

Beyond Cork Taint, Diam Enables Winemakers to Master How Oxygen Permeability and Time Interacts with Their Wine

The proper control of O2 levels lies at the heart of modern oenology

When winemakers put the cork in a bottle of wine, their job is done. It’s their last oenological act; after that, it’s up to the cork.

In the past, using a piece of cork was a random act of hope — the cork could be very tight or very loose, and the winemaker could be lucky or unlucky. After 5 or 6 years of aging, the result could be reductive bottles, perfect bottles or oxidized bottles — or all three in the same batch. And, the unfortunate part is when consumers experience this fault, they assume it’s the wine style they do not like.

“The amount of oxygen that penetrates the cork directly affects the aging of the wine,” says François Margot, “so it is essential to consistently control the flow of oxygen.” Margot is the North American Sales Manager for Diam Bouchage, a global leader in technological corking solutions for still and sparkling wines and spirits.

“When you use a piece of cork bark, this elasticity will vary from cork to cork and decrease over time,” he explains. “A high elasticity cork will take many years before the elasticity breaks down. When it does, the pressure against the glass decreases as time goes on, and then oxygen goes around the cork instead of through it, oxidizing your wine.”

Revolutionary Diam Technology Eliminates Cork Taint and Controls Oxygen and Time During Winemaking Process and Bottle Aging

Twenty years ago, TCA contamination almost spelled the end of cork closures, and winemakers lost confidence in this natural and sustainable material.

Diam Bouchage pioneered a technology to eliminate cork taint — and ended up giving winemakers a revolutionary new oenological tool to control the flow of oxygen during wine maturation. Instead of random elasticity, the company engineered the cork by granulating it, removing the woody parts, and disinfecting it to remove more than 150 molecules, thus purifying the cork of TCA and other contaminants.

“It’s not enough to say, ‘my cork controls oxygen transfer,’” says Margot. “We need to guarantee that the oxygen will be controlled over time. If the winemaker needs 30 years of aging, they need to be confident that the oxygen transfer will be stable for 30 years.”

The development of the Diam technology changed the market, and Diam Bouchage is now number one globally for technological closures.

Engineered cork continues to evolve

Further evolution of this technologically-advanced cork enables winemakers to select the optimal contribution of oxygen in two phases — releasing the oxygen from inside the cork: OIR (Oxygen Initial Release), followed by oxygen transfer through the cork over time: OTR (Oxygen Transmission Rate).

“We engineered the cork so the winemaker can choose not only how long the cork will do the job but also how much oxygen will pass through the cork each day,” Margot notes. “The winemaker now has an oenological tool that lets them bottle the same wine on the same day with different Diam corks to achieve differentiated goals instead of using a cork and hoping for the best.”

This phased control of oxygen allows winemakers to fine-tune the development of aromas during the wine maturation process.

“Choosing a cork to control oxygen levels in the bottle properly means controlling both the color and aromatic profile of the wine,” adds Diam’s R&D director, Christophe Loisel, “as well as reducing SO2 levels while respecting the quality of wine as it matures.”

Mytik Diam 10: A New Innovative Closure for Sparkling Wine Showcased at UWGS

Diam is the global leader in manufacturing technical corks and known for their product performance of clean and consistent corks with control choices of ageability. Their latest innovation, Mytik Diam 10, was showcase at the Unified Wine and Grape Symposium and Francois Margot, Sales Director, Diam North America explains why it’s a significant innovation for premium sparkling wines.

“Our new Mytik Diam 10 is a sparkling cork made for long aging. Of course, we always guarantee a high level of neutrality with non-detectable levels of compounds like TCA, TBA and other anysoles, and we also guarantee consistency for our whole range of corks,” says Margot. “The innovation is in the mechanical performance and oxygen management that allows us to guarantee aging for 10 years.”

Diam offers technical corks for still wines ranging from Diam 2 to Diam 30 with the number indicating the aging guarantee, but the Mytik range of sparkling wine corks previously only included Mytik Diam 3 and Mytik Diam 5. Margot explains why. “Champagne or Sparkling wine aging is different from still wine, there are different pressures and different behaviors of the wine. We had to do the research to find out exactly how the oxygen penetrates and what the impact is on the wine.”

Cork is used to seal bottles because it is elastic. It’s compressed and inserted into the bottle neck where it rebounds, creating a sealing effect. It’s a great seal, but any material will lose elasticity over time, and eventually it will no longer be tight enough to prevent oxygen from going around rather than through the cork.

“When the cork reaches its fatigue point you lose control of the aging, a lot more oxygen will penetrate the bottle, your free SO2 will drop, and your wine will oxidate pretty quickly. So, to guarantee a length of aging, it's not enough to guarantee an oxygen transfer rate,” says Margot. “You need to guarantee that the cork is going to stay elastic, you need to guarantee that the oxygen transfer and CO2 losses are going to be constant over time. If your sparkling bottle is going to pop in the next 10 years or more, these need to be stable over that period of time. Mytik Diam 10 provides that guarantee.”

The aging capability of the work varies with its elasticity, but Diam also offers different levels of oxygen ingress within the range that the winemakers can choose from depending on their wine aging goals.

To understand how the Mytik Diam 10 would perform over time and guarantee its aging capabilities, Diam used accelerated aging tests. “To see how it evolves and forecast when its elasticity would break down, we've tried a lot of things, but temperatures is a key factor to aging of the cork,” says Margot.

Alongside their continuous research into product innovation, Diam is also setting goals for sustainability and reducing their carbon footprint. Diam has committed to a 15% reduction in its greenhouse gas emission by 2025.

“Diam has been working on sustainability for more than 10 years now, so we have a good depth in our reports, and can show the evolution of how we reduce our carbon impacts,” says Margot.

Diam is dedicated to reducing its carbon footprint in all its business activities by reducing its energy consumption, recycling cork by-products and waste, and developing new environmentally friendly products and processes. They will achieve their target through an ambitious reduction of 55% of greenhouse gas emissions in energy and direct emissions while also controlling emissions of materials and freight.

Cork oak forests act as carbon sinks capturing and storing atmospheric carbon dioxide. According to climate experts, this carbon sequestration is estimated to be as much as 10 to 15 tons of CO2 per ton of harvested cork. Diam works with forest professionals in France to manage and maintain the regeneration of cork oak forests to help preserve the environment. Most recently they joined forces with the Sud Provence Alpes Cote d’Azur Region and ASL Suberaie Varoise to plant 3,252 cork oaks in the Var Region of Provence.

(September 1, 2021) – DIAM Bouchage, the global leader in manufacturing technical corks, is introducing its latest innovation, Mytik Diam 10, designed specifically for premium sparkling wines.  This latest innovation from DIAM comes after four years of research and development of  a closure that would best control the oxygen transfer rate to allow for better aging for premium sparkling wines and champagnes. 

“We had been hearing from our premium sparkling wine customers of the need for a cork with a longer lifespan which was the genesis for the Mytik Diam 10,” said Dimitri Tixador, permeability manager, R&D DIAM Bouchage.  He added, “The longer a cork lasts, the more its permeability must be controlled.  Mytik Diam 10 allows for improved preservation of CO2 pressure over time giving the winemaker more control throughout the process.”

Mytik Diam 10 was developed to maintain consistent technical properties for ten years.  Accelerated aging tests performed by DIAM confirmed  Mytik Diam 10 has exceptional durability and the corks allowed for improved preservation of CO2 pressure over time. In addition, Mytik Diam 10 provides superior oxygen control with the amount of O2 migrating from the cork – or the OIR (Oxygen Initial Release) – much lower than that of traditional corks.  DIAM’s design and manufacturing expertise results in consistency from one Mytik Diam 10 cork to the next, which enables winemakers to control the O2 during disgorgement. MODESTO, Calif. (July 7, 2021) – To better serve its premium small lot brands on the North Coast, G3 Enterprises has announced the opening of a new DIAM® cork facility in Napa.  

“We are opening this new DIAM® facility specifically to meet the growing demand from our premium and small lot winemakers in the immediate region. DIAM & Boisé Technical Meeting

This program aims to provide a deeper understanding on what is essential from oak and cork selection to wine integration. You will learn how technology in the selection and evaluation of raw materials is critical in achieving high quality and consistent oak alternatives and cork.
