To Butter or Not to Butter... One notable byproduct of malolactic bacteria (other than lactic acid!) is diacetyl, a compound that imparts buttery or popcorn-like aromas. While some aim to promote this character in their wines, others may prefer to minimize it. Read on to learn more about winemaking decisions that influence diacetyl production. Tips for Managing Diacetyl Strain Selection Some ML strains like PN4™and BETA™ produce more diacetyl, while strains like VP41™, O-MEGA™, and ML PRIME™ produce less. Inoculation Timing Co-inoculation of yeast and bacteria minimizes diacetyl, since yeast consumes it as bacteria produce it. Lees Contact Yeast and bacteria in the lees aren't necessarily dead; they can remain alive for months. Lees contact allows for the consumption of diacetyl, decreasing the total amount in the wine. SO2 Management Adding SOâ‚‚ just after MLF protects diacetyl. SOâ‚‚ binds to diacetyl in a reversible reaction. Initiall

Hear me out Up and down the California Coast, we got some rain last week. Up North, places got around 1.3” with up to 2” closer to the ocean. Down south in Paso Robles, we’re looking similar numbers of between 1.5” and 2”. So, one would naturally think that if we were irrigating post-harvest (as we highly recommend), we can stop now. As you may have suspected by the title of this article, that may or may not be the case. Profile Picture Here at AV, we love looking at soil moisture charts. However, in the case of rainfall, it can be misleading. Looking at the graph below, you can see that irrigations produce a clear spike indicating how deeply water percolated and how long it took to be completely depleted by plant roots. Rain doesn’t deliver the same concentrated volume you’re used to getting with a drip emitter. Therefore it doesn’t infiltrate the soil in the same way. You may see shallower percolation from the inch plus of rain we got

In recent years, the increasing frequency and intensity of wildfires have posed significant challenges for winemakers and grape growers. One of the most pressing issues is the impact of smoke exposure on grapes, which can lead to undesirable flavors and aromas in the resulting wines. This document aims to provide winemakers and grape growers with a general understanding of their options for evaluating smoke-tainted grapes. “With localized testing now available at ETS, a winemaker can make more informed decisions on whether to harvest the grapes or write them off,” says General Manager Kyle Crowley of VA Filtration USA. By exploring various assessment methods and mitigation strategies, the industry can make informed decisions to ensure the quality and marketability of their wines despite the challenges posed by smoke exposure. Pre-Harvest: Pull grape (berries) samples to test before harvesting all your grapes for fermentation production. ETS offers an excellent smoke panel t

Hard to believe, we are a quarter of the way through 2025! It seems like just yesterday we were starting 2025, but here we are, 90 days in to the "new" year. Here are a few things you may have missed, things that caught our eye (or ear), and a few actionable ideas for the next quarter. 2024 Annual Report Card - WISE Mystery Shopping Triple Score In early 2025, we released our Annual Triple Score Report Card. While Mystery Shopping covers over 75 criteria points, these three are perhaps the most important. How often are our Mystery Shoppers asked buy wine, how often are they warmly invited to join the wine club, and how often are they asked to keep in touch via joining the mailing list? In 2024, we saw a dramatic decline in Triple Score averages. In particular, data collection is critically low at just 18%—meaning we’re only asking fewer than one in five guests to keep the conversation going. Wine clubs work because people DO like to be part of them (did you know

Malolactic Fermentation Feasibility: Factors Affecting Ease of MLF There are several factors that influence malolactic fermentation (MLF). This includes obvious factors like alcohol, pH, and SO2 but also includes less obvious factors like alcoholic fermentation difficulty, yeast nutritional requirements, etc. Read on to learn more about some of these less frequently considered factors. READ THE FULL ARTICLE Beyond the Basics Temperature Most cellars are actually too cold and inhibitory to malolactic bacteria. The ideal temperature range for MLF is between 18-22°C (64-72°F). If you consistently see sluggish or stuck MLFs, consider conducting MLF in tank or in a warmer space. Yeast Nutrient Need Bacteria require nutrients. Certain yeast strains have high nutrient demands and may leave the wine depleted of nutrtients (see yeast product description). In these cases we recommend using a malolactic fermentation nutrient. Malic Acid Level Very low malic acid concentrations (&l
