Adjust pH Naturally and Precisely with Oenodia STARS® Technology Traditional pH adjustment tools like tartaric acid and potassium carbonate often lack precision and can alter wine flavor, especially after fermentation. Oenodia’s STARS electrodialysis process is a smarter way to fine-tune pH, enhancing flavor, color, and SO₂ performance. Learn More Why Adjust Acidity? STABILITY ENHANCE SO₂ EFFECTIVENESS Sulfur dioxide is most effective within a specific pH range to protect wine from microbes and oxidation. When pH>3.65, its effectiveness drops, requiring higher free SO₂ levels. Lowering pH helps maintain wine stability with less intervention. SENSORY ADJUST FLAVOR AND COLOR pH plays a key role in a wine’s sensory profile and visual appeal. A lower pH can sharpen flavor balance, reduce flabbiness, and enhance freshness. pH also influences color, especially in reds and rosés. pH adjustment is a natural way to shift color. FLEXIBL

Willmes Sphera: Membrane Pressing meets Basket Pressing Sphera is a round press with no corners or edges, designed for gentle pressing of small lots with minimal need for rocking or rotating. The patented 360-degree membrane inflates equally from all directions, resulting in higher yields at lower pressures and 70% less lees than traditional basket presses. LEARN MORE Large Filling Door A two-foot filling door allows for quick filling via hopper or conveyor. Sphera does not need to be rotated or rocked to make room for additional fruit. Dual Purpose Juice Tray and Emptying Bin The juice tray also functions as an emptying bin and can be removed directly from the press via forklift. Single Juice Outlet The Sphera has a single juice outlet, allowing minimal oxygen ingress during the pressing cycle. The juice valve can be closed for skin contact and maceration. Easy to Clean The unique shape means there are no dead spots inside the press, and the clean-in-place (CIP) system makes cl

For over 100 years, the Willmes name has been synonymous with wine quality. Since 1951, Willmes engineers have mastered the art and science of the pneumatic grape press with the unique combination of double-membrane technology and vertical juice drains for higher juice yields in less time. Technology that now serves as the backbone of all current devices in the market today. So what really goes on inside a Willmes press processing fruit? This short video of a Willmes SIGMA 8 shows the double membrane technology and vertical juice drains in action, gently pressing white grapes to yield maximum quality juice with less lees and less pressure. Willmes presses are truly the best press in the world, designed to meet the needs of wineries of all sizes, production volume, and varietals with customizable programming and solutions. Due to global shipping and supply chain disruptions, we recommend placing orders as soon as possible and no later than end of January to avoid furt

Fermenting on bentonite can be tricky! Here's a quick rundown on why we like it and who it's right for. Who should ferment on bentonite? Winemakers making tank fermented whites that need early protein stabilization and preservation of aromatics, especially in high protein varietals or in difficult seasons. Why ferment on bentonite? Early removal of heat unstable proteins (solubility of proteins decrease as alcohol increases) Better preservation of aromatics than post-fermentation bentonite additions May lower overall levels of bentonite needed (compared to post-fermentation treatment levels) FERMOBENT PORE-TEC compacts well and leads to lower lees volumes than post-fermentation bentonite treatments What bentonite? FERMOBENT® PORE-TEC is our recommended bentonite for use during fermentation because of its exceptional purity, good dispersion, effective protein removal, and formation of a stable deposit. When is the best time to add bentonite? Bentonite may be added at any
