Novonesis Viniflora® cultures are the most widely used malolactic cultures. Reliable and predictable, Viniflora bacteria cultures are trusted by more winemakers worldwide to get their wines through malolactic fermentation on time and with desirable organoleptic outcomes. However, not all strains of Oenococcus oeni are the same, nor are all malolactic bacterial preparations. Some strains are more tolerant to environmental parameters such as pH, temperature, sulfur dioxide and alcohol. To help you choose the right strain for your wine, view the chart below and watch the videos for more tips. Can't decide which strain to use? We're here to help! - Three ML Bacteria Nutrient Facts - Nutritional requirements are different for bacteria than for yeast. Unlike yeast, bacteria can neither store nor synthesize all essential amino acids required for growth. Therefore nutrients must be available from the environment. Post alcoholic fermentation wines can often be nutrient deficient due to nutrient utilization by yeast… and yeast are often slow to lyse and release nutrients back into the wines after fermentation. Nutritional depletion can stall or cause sluggish malolactic fermentations. Nutrient supplementation during the bacterial inoculation can enhance the growing conditions and speed the malolactic fermentation. Gusmer's MicroEssentials Oenos is strongly recommended for wines that present challenging conditions, such as high S02, high alcohol, low pH. Download the MicroEssentials Oenos Product Data Sheet

Chr. Hansen's Viniflora® direct inoculation malolactic bacteria is relied on by winemakers world-wide for dependable malolactic fermentations. As the world leader in bacterial cultures, Chr. Hansen scientists have develop a method which measures the bacteria cell’s ability to convert malic acid to lactic acid, known as the “MACC” (Malic Acid Conversion Capacity), a ground breaking method to measure this very difficult parameter. All Viniflora products are tested for the correct number of viable cells and for the assurance that these cells have the desired level of malolactic activity in wine. Only Chr. Hansen does this! Chr. Hansen brings winemakers control of malolactic fermentations through a full range of high-quality bacteria products ready for direct inoculation.
