The makers of SmartBarrel Wine Storage system are proud to announce the introduction of GOlite, a new fermentation head that enables primary fermentation in SmartBarrel liners. It is suitable for use with grape juice (but not grape must), cider, mead and other liquid substrates. “We chose the GOfermenter system to minimize water use in our extreme desert location, but the benefits go far beyond water conservation,” avers Ann Torrence of Etta Place Cider in Torrey, Utah, “We are known for clean flavors because our fermentations are so hygienic in the bags, and we love the ease of clean-up when we are racking ciders.” The new add-on tool includes a temperature probe and a sampling port with a weighted ball for dipping into the fermenting liquid. Unlike the GOfermentor which has automatic punching and built-in press, GOlite is only usable for liquids. It is therefore suitable for fermentation of grape and other fruit juices. With winegrape analysis laboratories backed up for months, using a micro-fermentation to reveal smoke taint has emerged as a quicker alternative detection method. Micro-fermentation can be easily performed using the GOfermentor Jr automated wine fermenter. Single-use fermentation bags eliminate cleaning labor and contamination. Punch is automatic based on user schedule, requiring no labor and completely reproducible. It is performed by periodically inflating internal bladders to disperse the cap. Pressing is done by connecting a wine pump and pressing a button – this inflates an internal bladder and squeezes the pomace dry. Lift out the bag with the spent pomace and simply put in a new one for the next trial.
