As we are in bottling season, free sulfite deserves extra attention. Free SO₂ is your last line of defense against oxidation and microbial spoilage. Levels can shift more than expected after racking, blending, or filtration. Before bottling, make sure to: • Measure and confirm free SO₂ • Adjust based on pH and desired molecular SO₂ • Recheck after final additions and just prior to filling A few ppm can make the difference between a wine that evolves beautifully and one that fades prematurely. Please reach out if you’d like to chat about automated solutions for checking free sulfite.

From there, the impact can escalate quickly, leading to rework, dumped wine, packaging holds, and ultimately, brand damage. The good news is that these challenges are manageable with the right approach. But bottling line sanitation isn’t one-size-fits-all. It requires the right chemistry, well-designed protocols, and a clear understanding of your specific equipment and wines. A strong program starts with

By Chelsea Franchi Tablas Creek is well-versed in the meaning of partnership. After all, in business and practice, we are a partnership ourselves. This winery was built upon the personal and professional relationship of two esteemed families: the Perrin Family of Chateau de Beaucastel and the Haas Family of Vineyard Brands. This initial partnership not only shaped our present approach to business but also serves as a guiding principle in nurturing future collaborations. We take great pride in the work we put forth in the vineyard, the cellar, and the business, so any ancillary associations we forge have some high standards to live up to.
