Mori's Basket Press Gets Updated for 2017 – Old School Look, Modern AmenitiesMori's basket press have received form and function updates for 2017, making them more beautiful and easier to use than ever.
The Food-Grade Plastic Basket:

Whenever winemakers walk past a press with a wooden basket in our shop they always stop, do a double-take, and say the same thing: "That's beautiful…but I'd hate to have to clean it". We've long-since transitioned to stainless steel baskets for all but the most aesthetically-obsessed winemakers. Still, there's something about the wooden basket. For 2017 Mori is introducing the option of a basket with white food-grade plastic slats. It's the best of both worlds. Easy to clean, and it would not look out of place in a generations-old Chianti estate. For customer-facing crush pads where the winemaking process is part of the experience, this is a wonderful compromise between form and function.
The "Temporizer" Automatic Press Timer:
One of the most exciting additions to Mori's 2017 basket press line-up is the addition of the "Temporizer" automatic timer as a standard feature on all forkliftable presses 5 HL and larger. The temporizer allows the winemaker to set three parameters:
- Pressing time – Mori recommends 5 seconds as a starting point
- Resting time – Mori recommends 5 minutes as a starting point
- Max pressure – This is entirely up to the user
The user simply moves the pressing ram down to the level of the grapes and starts the "Temporizer" cycle. Using the above settings, the press will move down for 5 seconds, allow free-run juice to drain for 5 minutes, then continue pressing for 5 seconds, and so on until the max pressure is reached, and the press automatically stops. Simple.

Grapes in motion
Mori's MFV grape trailers allow you to move your grapes from the vineyard to the crush pad. They're a combination trailer and vibratory feeding hopper. The all-stainless trailer can move up to 5 tons at time. When you reach your destination, the trailer lifts hydraulically and turns into a vibrating shaker table. You can precisely adjust the angle of incline and vibration speed to meter in grapes at the desired rates. Read more...

Why Glass Fiber Filters are Perfect for Biofine Removal
Do Fining Agents Require Filtration?
Maybe you've seen debates on Reddit or brewing & winemaking forums. Do you really have to filter out Biofine?
“I don't need to filter. My product is already clear, so surely racking off the Biofine is enough…right?”
Heck, maybe filtering out Biofine didn't even occur to you at all.
“You mean I have to filter out my filter additive? That makes no sense!”
While there are many areas where the US government could stand to be more transparent, the question of whether you need to filter after using Biofine (a.k.a silicon dioxide) is completely clear—no pun intended.
For breweries, here's what the FDA has to say:
§ 172.480 Silicon dioxide
(c) It is used or intended for use as a stabilizer in the production of beer, and is removed from the beer by filtration prior to final processing.
And lest you think they forgot about wineries:
§ 27 CFR 24.246 - Materials authorized for the treatment of wine and juice
Silicon dioxide must be completely removed by filtration.
You'll notice that in both cases there is no room for interpretation. It must be removed by filtration—not settling or racking.
It Looks Clear to Me
Biofine, silicon dioxide, silica, etc. They all have one purpose: to make your product look great. And they work very well! After racking and settling, your “Crispy Boi” or Pinot Grigio may look ready for the shelf. But there's more than meets the eye.
The reason behind the FDA requirement to remove silicon dioxide with filtration is that settling and racking remove the largest visible particles, but they still leave a lot behind. Consider that the smallest particle you can see with your naked eye is around 60 to 80 microns. Meanwhile, the typical residual silicon dioxide particle is, perhaps, just a few microns in size. Maybe less!
The bottom line is: while you can trust your eyes to tell you if your product is bright and clear enough to look great in the glass, you can't rely on them to tell you if there's any residual Biofine left in your product.
Luckily, there's an easy solution.

SANTA ROSA, CA (February 19, 2025) - TCW Equipment announces the expansion of its Northern California presence with a new location in Mendocino County in Ukiah, complementing its established Santa Rosa store. The expansion includes relocating warehouse operations and opening a new showroom at 401 S State Street, Ukiah, in the heart of Ukiah’s renovated and thriving downtown business district.

“We’re excited to grow the business and have a showroom for customers in Mendocino County,” says Michael Caviness, owner and manager of TCW, “moving our warehouse operations to Ukiah allows us to keep our low prices, expand our customer base, and still maintain our historic presence in Sonoma & Napa Counties.”

A Hose You Can Build & Repair Yourself With No ToolsThis Just In: A brand new hose you can assemble yourself. Millennium hose from IVG is a sanitary hose that is compatible with wine, beer, high-proof spirits, and even food-based oils like olive oil or fatty dairy products.
