ESTASI; Best Destemmer, Whole Berries & Minimal Stem Breakage
The belt destemmer, which took the honor of BEST DESTEMMER by Wine Business Monthly in 2010 (March 2010 issue), is a fresh take on removing berries off the stem as gently as possible. It is actually best described by what it DOESNT HAVE. It doesnt have a beating shaft, a cage or "centrifugal force and the clusters are not torn apart from the rachis. Rather the berries are brushed off the rachis. Similar in design to the traditional french method of removing berries over a screen with a broom, the ESTASI has a transverse oscillating screen which gently brushes the berries off the stem. As the berries fall through the screen the rachis is brought forward into your waste bin (see image). This is seen as the most delicate way of removing berries from the stem!
This unit is also designed to give a high percentage of whole berries and minimize stem breakage. An additional feature this machine offers is a compact sorting area on top of the actual destemmer. So you can now sort and de-stem your clusters in 1 machine. When purchasing a traditional style destemmer and a sorting table separately the costs alone would surpass the price of the estasi.
