Not only are press times cut almost in half, with reds pressing in 40 to 50 minutes, but also whites pressing in 1 hour to an hour 15 minutes! This faster pressing time dramatically decreases the browning in white wines. 

By centrally inflating a thick elastomeric membrane vs. a side inflating thin sheet of nylon, you get a thinner cake. The thinner the cake, the easier and faster it is to get the higher yields, with less pressure (higher quality). Cleaning is also easy with the pre-piped cleaning jets, running along the side of the drum.
